Patriotic Bites

We are all excited for the holiday weekend, but why ruin your hard work by over indulging? A great way to maintain your healthy lifestyle is by bringing your own tasty treats to a BBQ. When your host gift doubles as a way to give yourself some additional healthy options, you do everyone a favor! That being said, you don’t need to show up with a veggie platter, have fun with it. My lemon tarts are low in fat, low in calories, yummy, and totally look the part – can you think of anything better?

Ingredients: 1 cup of 0% Fage Greek Yogurt, Sugar Substitute (of your liking, to taste), half of a lemon (for a bit of fresh juice), (pre-cooked) Phyllo Dough Mini Cups (1 cup of yogurt makes about 6 cups), raspberries, blackberries (or blueberries)

Get It Cookin’: Sweeten your yogurt, squeezing in a bit of fresh lemon juice (optional, but totally delish), add a dollop of yogurt into each cup and top off with your fresh fruit. Seriously, that’s it!
