I am a huge pasta lover, so this is a great healthy alternative to traditional lasagna:
Spaghetti Squash Lasagna
1 spaghetti squash
1 lb ground turkey (I use 94% fat free, but you can also also use lean beef)
1 onion, diced
3 cloves garlic
3 cups spinach, chopped
4 cups tomato sauce (i personally make my own, but you can also use jarred)
6 oz lowfat mozzarella*Preheat oven to 375. spray 9 x 13 pan.

*Cut squash in half. scoop seeds. put on paper towel cut side down and microwave for 10 mins.

*Sauté onions and garlic, salt and pepper.  Add meat and brown in a skillet.

*Scoop the squash. Put 1/2 the squash on the bottom of the pan and put
1/2 the tomato sauce on top. Then put a layer of spinach and a layer of turkey.  Top with 1/2 the cheese. Repeat the alternating layers (squash, sauce, meat, cheese).

*Bake for 30 minutes uncovered. Broil 2-3 minutes until top is brown and bubbly. Cool for 10-15 minutes.
