Refreshing Summertime Fruity Popsicles

I love fun and easy recipes that are healthy and delicious. These fruity popsicles made with unsweetened coconut milk is one of my go-to recipes for the summertime.

The taste is very light and can be bland (it can take time to get used to), but it really depends on your choice of fruit since they will act as the main sweetener. This recipe is delicious with either coconut milk or coconut water.  Do keep in mind that if you want to see the actual fruit in your popsicles, I’d recommend using coconut water as it will freeze with a transparency.

I got these cute little popsicle molds from Ikea for only $1.99! I was hesitant at first because I wasn’t sure of the quality but it worked perfectly so I would highly recommend it rather than spending a fortune on other molds. I love finding bargains that work and this definitely got me super excited.

Due to the small size of the popsicle mold, you don’t need that many fruit in each one.


1/4 cup blueberries

1/4 cup raspberries

4 medium strawberries, sliced

1/2 kiwi, cubed

1.5 cups of unsweetened coconut milk or coconut water


1. Fill each popsicle mold with a mixture of the fruit. I would recommend filling up about 2/3 of the popsicle mold. ( Make sure you still have some room for the coconut milk/coconut water to hold fruit together.)

2. Measure about 1.5 cups of coconut milk/coconut water and fill each popsicle mold then insert the handles back into their designated slots.

3. Stick the molds in the freezer for about 4-5 hours if you want to eat it within the same day or leave them in the freezer overnight.

4. To easily remove your popsicle from the mold, run with lukewarm water.

You can be very flexible with the fruit choices and add in whatever you’d like! If you have some leftover fruit in the end like I did, use it to make fruit infused water in a bottle and save it for later!
